French Potato Salad

Summer in the our household means one thing and one thing only, barbecue.

This is a time when we really let our French flag fly. Barbecues typically start with a traditional apéritif and a game of pétanque followed by many a pork product (whether cured or grilled), tons of wine and cheese, and this delicious French potato salad.

It’s funny how the simplest dishes often garner the most attention. This one was our summer darling who got all the compliments and recipe requests.

Now you too can whip up a French potato salad with ingredients from Trader Joe’s and serve it at your next outdoor shindig!

Trader Joe’s Shopping List

• One bag of Trader Joe’s Gold Potatoes
• One package Haricot Vert green beans
• One package Citterio Cubetti Pancetta (either in the meat section or near the cheese with the sliced deli meats and charcuterie)
• One bag lemons
• Trader Joe’s Imported Olive oil
• Trader Joe’s Dijon Mustard with White Wine
• Trader Joe’s Whole Grain Dijon Mustard
• Salt and pepper to taste

Make the French Potato Salad

First, make a tasty vinaigrette by mixing 3 tablespoons lemon juice, 3 tablespoons olive oil, 3 teaspoons each of the two mustards, a small teaspoon of honey, and salt to taste. Shake vigorously in a jar until ingredients combine.

Next peel all of the potatoes and steam them for about 20-25 minutes until tender and easily pierced with a knife. Once the potatoes have cooled, cut them into bite-size pieces.

Meanwhile, steam the green beans by following the instructions on the package. Once cooked, dunk them in a quick ice bath to stop the cooking and keep them looking fresh. Cut about half of the green beans into thirds and reserve the remaining half for another meal.

Fry the pancetta in a pan with a little bit of oil on medium heat for about five minutes. They should be cooked through and slightly crispy.

Put the potatoes and green beans in a large bowl. Pour the vinaigrette and pancetta in as well. Don’t shy away from including the fat rendered from the pancetta, that’s good stuff right there!

Mix everything around adding salt and pepper to taste. The potatoes should break down a bit as you are mixing. You can also mash a few potatoes with a fork to give the salad a creamier taste.

Serve the potato salad at room temperature or warm it up in the microwave for a few minutes. You may also choose to squeeze half a lemon over everything before serving to add some brightness.

Best paired with French barbecue items including grilled sausages, pork, or steak. It also goes well with roasted chicken.
